ANOTHER muffin recipe and other tasty happenings.

Hey, guess what?


That's what I had for breakfast this morning. 

It's Leanne's Coconut Surprise Breakfast Bake! Except I didn't do the "surprise" fruit layer in the middle. I just baked it and then topped it with PB&Co Dark Chocolate Dreams and made a ring of banana slices around it :-) It was delicious. Thank you Leanne! I so totally love you <3

In other food news:

I have been really into wraps lately and have discovered a love for whole grain ivory teff.


Here's one filled with hummus, kale (massaged with lemon, avocado and salt), bell peppers and olives. So simple. So good.

A muffin recipe:

This is a variation of my Coconut Banana Oat Muffins.
Vegan and Gluten-Free

1/2 cup coconut flour
1 cup oats
1 mashed banana
2 tbsp chia seeds + 6 tbsp water
1/4 cup coconut oil
1/4 cup coconut milk
1/4 cup maple syrup
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp vanilla extract
1 tsp cinnamon
1/4 cup chocolate chips

Preheat oven to 350 degrees. In a small bowl combine the chia seeds and water. Stir together and then let sit for a few minutes to thicken. Meanwhile, combine all the dry ingredients in a large bowl and whisk together. In a separate bowl mix together all your wet ingredients. Add the chia seed/water mixture to the wet ingredients. Pour the wet ingredients into the dry and mix until combined. Fold in the chocolate chips. Lightly oil your muffin tins or just use muffin tin liners. Fill them up about 3/4 full. Bake for 17-20 minutes or until a toothpick inserted comes out clean.




For some reason my muffins never look perfect, but they always taste SO good :-) I think I may like this batch better than the original version.

Do you remember my beautiful friends Tessa and Daniel? Well, last night they invited me and Woody over for a DELICIOUS dinner. It was beautiful. Such good company and amazing food.

  Abalone (that Daniel dives for himself!) dipped in gluten-free batter then fried in butter (well, earth balance, actually) and tons of garlic. Topped with a drizzle of lemon. Woah.


 Abalone, salad, baked sweet potato, baked onion and garlic toast on Udi's cinnamon raisin bread (which ended up being an amazing combo!)

 So much chocolate! Chocolate dipped strawberries and chocolate dipped sunflower butter banana chunks.

Chocolate sunflower butter balls and chocolate brownie balls. I made the brownie balls and I really might have to share that recipe with you eventually. They are pretty insane.
