Breakfast this morning:
Cereal with strawberries and coconut milk. Delicious.
Lunch:
Creamy black bean soup with sweet potato biscuits!
I adapted the soup recipe from A Healthy Passion
- 1 can black beans, drained and rinsed
- 1 cup water
- 1/3 veggie cube
- 1/4 cup salsa (I used Mrs. Renfro's Mango Habanero!)
- 1/2 tsp cumin
- 2 cloves garlic
- Handful of cilantro
Blend all the ingredients in a blender, then transfer to a sauce pan and heat on the stove until hot. Top the soup with more salsa and cilantro! I ate almost the whole batch! And two biscuits! :-)
So, I am considering changing the look of my blog. I've noticed that most blogs out there have a simple, clean layout and I kinda like that. I'm wondering if all the swirls I got going on in the background is distracting. What do you think?!? Do you like it? Or do you prefer a more simple look? I'm going to play around with the idea of a new look for a while and see how I feel :-)
