Does this look comfortable?? |
Ok, now that the doggie pics are out of the way, let's do the food thing. :-)
Lunch:
Nothing too fancy here. I just threw together some tuna with tomatoes, carrots, sweet baby bell peppers, black olives, vegenaise, mustard, sweet pickle relish and garlic gold. I tossed that on some fresh greens and topped it all off with some nutritional yeast. :-)
Dinner was Woody's creation.
It was kind of a mish mash of everything we had! Woody started out by making some brown rice pasta and some brown rice couscous. (There was only a tiny bit of pasta and Woody was really worried it wasn't going to be enough so I said, "Make some fricken couscous too then!" So he did. But there ended up being plenty of pasta anyway! Leftovers, what?!) Anyway, then he steamed some beets. While that was happening, he sauteed some onions and beet greens. When the pasta, couscous and beets were done, he threw them together along with tomatoes, bell peppers and black olives. Luckily I just happened to have made some pesto to go on top!
Hemp Seed Pesto
- 1 cup loosely packed basil
- 1 clove garlic
- Juice of 1/2 meyer lemon
- 2 tbsp hemp seeds
- 2 tbsp garlic gold oil
- 2 tbsp nutritional yeast
- splash of water
- salt and pepper to taste
Ok, well I hope you're having a wonderful evening and I'll see you tomorrow. I feel a little silly talking to "you" cuz I don't even know who "you" are. I know a few of my friends are reading this (THANKS GUYS!) but who else?! Well, whoever you are, I love you. :-)
