Bliss Balls

My mind and heart have been on Japan all day. I spent the day at the coast, watching the ocean, reflecting on it's strength and the energy that it carries. Nature is such a powerful force and we are completely at its mercy. Natural disasters are a part of life but are so tragic. It kind of helps put things into perspective a little bit though, right? I'm feeling grateful to be alive today.

I know I made the choice to do a little cleanse and not eat sugar for over a month, but I have still been making and eating treats every day! WTF? They are sugar-free treats (just sweetened with dates) but I still feel like I am cheating a little bit. I would like to let of the attachment I have to eating something sweet after every meal. At least I am only eating natural fruit sugars right now. But still, I have a problem!

I have been making treats like these for years, but this particular recipe is adapted from Chocolate Covered Katie's Fudge Babies. I'm going to call them:

Chocolate Bliss Balls!

  • 1/2 cup walnuts
  • 1 cup dates
  • 2 tbsp raw cacoa powder
  • 1 teaspoon vanilla extract
  • Sprinkle of sea salt
Combine all ingredients in a blender or food processor and blend away!

Then proceed to roll into balls of bliss :-)

I also made these.

Macaroon Bliss Balls!

  • 1/4 cup walnuts
  • 1/4 cups shredded coconut
  • 1/2 cup dates
  • 1 tsp vanilla extract
  • 1 tsp coconut extract
  • Sprinkling of cinnamon
  • Sprinkling of salt
  • Sprinkling of cacao nibs
Combine all ingredients (except cacao nibs) in food processor or blender and blend away! Then add the cacao nibs and roll into balls.

Yep :-)

Breakfast was pretty today which always makes me happy!

Homemade granola, coconut milk, blueberries, strawberries, raisins and cacao nibs :-) So wonderful.

Dinner was also very pretty!

Greens, hard boiled egg, baby tomatoes, baby bell peppers, black olives and cilantro.

Topped with hummus, nutritional yeast and garlic gold. So satisfying :-)

Well, there is a handsome man sitting next to me so I'm going to go hang out with him now :-) Thanks for reading and being awesome. Much love <3
