Getting sunburned and making muffins.

Hey beauty loves :-) I hope your week is off to a beautiful start so far.

I'm sitting here feeling so foolish and sorry for myself right now :-( I had a BEAUTIFUL day yesterday. I spent all day playing in the river and basking in the sun with my sweet lover and doggies. It was wonderful. But I got SO sunburned :-( My skin is so red and hot and mad at me right now. I know sunburns are a a part of life and can just happen sometimes but I still feel so bad. I usually get really brown in the summer from spending so much time outside. But it seems that I usually get burnt once before I start getting really tan. Luckily we have an amazing Aloe plant grown with lots of love that I'm using to soothe my poor skin. I'm bummed because I had planned on going to yoga this morning but I just couldn't bare the thought of practicing in a heated studio. I think it would aggravate the burn. So I am just chillin' right now, trying to heal my skin.

Here is a video from yesterday. Woody was decorating my tummy with little rocks. He didn't actually mean to take a video. He thought he was taking a photo ;-) 


 So, at least I had a lot of fun while I was getting sunburnt! 
(I have a couple more videos that I have been trying forever to post! But for some reason I'm unable to upload them! :-( Oh well.) 

The other morning, Woody and I went out for breakfast at Flavor. It was delicious :-) 

We both ordered cappuccinos.


 

 I got the Chilaquiles. (Yum)

 And Woody got the Eggs Benedict.

 As much as I love making breakfast at home, going out for breakfast can be such a treat sometime :-) 

So, if you don't like zucchini or are getting sick of muffins then you're going to hate me. Why? Because I have another zucchini muffin recipe for you! I'm sorry but I just gotta keep using up the zucchini. And I LOVE muffins so it's a perfect way to use the zucchini for me! :-) If you happen to have any good zucchini recipes, PLEASE pass them on my way! :-)

Sweet Potato Zucchini Spelt Muffins
(Adapted from Eat, Drink and Be Vegan)

2 tbsp flax meal
1/2 cup + 2 tbsp coconut milk (or milk of your choice)
1 cup pureed sweet potato
1 cup finely grated zucchini
1/4 cup honey (I wanted to use maple syrup but I was all out!)
1 tsp vanilla extract
3 tbsp coconut oil
2 cups spelt flour
1/4 cup coconut sugar
1/2 tsp sea salt
1 tsp cinnamon
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup chopped walnuts
1/2 cup raisins
1/2 cup mini chocolate chips

Preheat oven to 375 degrees. Combine flax meal and milk in a bowl and set aside. In a large bowl, sift together all the dry ingredients. In a separate bowl, combine the sweet potato, zucchini, honey, vanilla and coconut oil. Add in the milk-flax meal mixture. Stir well. Then add the wet mixture to the dry and mix until combined. Gently fold in the walnuts, raisins and chocolate chips. Lightly oil your muffins tin or use muffin tin liners. Fill them about 3/4 full. Bake for 20-25 minutes or until a toothpick inserted comes out clean.







Another beautiful and delicious muffin! Success :-)

And the muffin queen does it again!!! Fabulous! Happy Herbivore has a wonderful chocolate zucchini muffin recipe that I LOVE. But I know you've tried those :) The other day I saw a blog that had stuffed zucchini boats where she scooped out the insides and stuffed them with a lentil and tempeh mixture... they looked really yummy!! Hope your sunburn feels better girlie! lots and lots of aloe ;)

Sorry about the sunburn! They can be such killers. No bad ones for me yet this summer!! My mom's tried and true remedy is to steep a bunch of tea bags, let them cool, then dab the bags on the burn. I don't know WHY, but it definitely helps!!

Breakfast is by far my favorite meal, and my boyfriend go out for it far more than we stay in!! I've got some good recipes though so we've been trying to cook it together more often :)

Ouch ouch ouch. Sunburn is definitely no fun, and I hope you feel better soon, love <3 But at least you had a good time, right? Just make sure to use lots of aloe and a cool, damp cloth if it gets bad, and it should be better and turn into a good-looking tan in no time ;) And I wish I could help you with the zucchini, but that's one of the only veggies that I can't stand, so I don't really look at recipes that include them. I know they can be delicious, but I think I've just had a few too many bad memories associated with zucchinis, so they kind of turn me off.

I'm so dying to bake with zucchini!!!! Your baked goods always look so amazing, moist, and delicious.

I'm sorry about your sunburns :( Those can be the worst. I usually get tan really easily in the summer like you, but I've also gotten a sunburn on my shoulders from last weekend. I suppose the first sunburn of the summer is just something we all have to deal with!

I'm sorry about your burn! I accidentally let myself get way too burnt in the first part of summer, too. I'm the same way. Usually I'll burn a little bit and then just tan, but this time I had definitely over-done it in the sun :

Ekkks ouchy your sunburn sounds painful, and my dear i so feel your pain, i once got so badly burnt on my tummy that I couldnt move, it was hell. I made sure I learn my lesson and I have never burnt since.
The muffins look fab.

I'm sorry about your sunburn, sweet girl! I got a really bad one a few weeks ago, too...I fell asleep in the sun on my the bow of my dad's boat, and when everyone found me, it was too late, haha! You're on the right track with the aloe, it works wonders, and your skin will forgive you this one time :)

Chilaquiles are my favorite! Going out to breakfast is so fun - I didn't always love it but now I totally do, especially if it's Mexican or Moroccan. Shakshuka with fresh pita and hummus is my all-time favorite brunch (next to a New York bagel, of course).

And I'd never get tired of the muffin recipes! They look positively yummy (especially with all the coconut), so keep them coming!

I love this recipe for seared zucchini with za'atar and crispy chickpeas - it's so addictive!
