Spiced Maple Coconut Oat Streusel Muffins

Good morning beautiful people! If you saw my post yesterday then you know that I have a muffin recipe for you today!






Spiced Maple Coconut Oat Streusel Muffins:

  • 1/2 cup Pamela's Baking Mix (feel free to use any type of flour in place of Pamela's. And if you do, let me know how it turns out!) 
  • 1/2 cup coconut flour
  • 1/2 cup oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 1 flax egg (1 tsbp ground flax seeds + 3 tbsp water) 
  • 2 tbsp coconut oil
  • 1/3 cup coconut milk
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract
Streusel Topping:
  • 1/3 cup oats
  • 1 tbsp coconut flour
  • 1/2 tsp cinnamon
  • 1 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1 tbsp shredded coconut
Preheat the oven to 400 degrees. To prepare the streusel topping, combine the oats, flour, cinnamon, coconut oil, maple syrup and shredded coconut in a small bowl and use a fork to mix and mash together. In a medium bowl, stir together the Pamela's baking mix, coconut flour, oats, baking powder, baking soda, salt, cinnamon, nutmeg and allspice. In a separate bowl, mix together the flax egg, melted coconut oil, coconut milk, maple syrup and vanilla extract. Add the liquid ingredients to the dry ingredients and mix until well combined. Lightly oil a muffin tin or use muffin tin liners. Fill them up about 1/3 of the way full. Crumble some of the streusel topping on each muffin. Then place in the oven and bake for about 12 minutes or until a knife or toothpick comes out clean. Makes 7 small muffins. 

The thing about creating recipes is you never know how they are going to turn out! These muffins taste so good. They are spicy and coconutty and delicious. But they are SUPER dense and hearty and a little dry. I was hoping that they'd be a bit more moist and cakey. But they are still awesome. They have a great flavor and have a lot of potential. Next time I make them, I'm hoping to make them more moist and fluffy and cake-like, perhaps by adding more coconut milk and coconut oil. Another slight downfall about them is that the streusel topping doesn't really stay on top! Eating these muffins is a crumbly experience, for sure. I sampled one while standing in the kitchen and Kona was scrambling around my feet, munching up the crumbs falling to the floor! 

So what do you do with a dry muffin anyway?


Crumble it in a bowl, cover it with coconut milk and eat it for breakfast! In this bowl I also put a spoonful each of maple almond butter, chocolate almond butter and jelly, sliced banana and a sprinkle of chia seeds. What a wonderful way to eat these muffins! Like I said, they are super dense and pretty high in fiber so I have a feeling I'm going to stay full for a while. 

I have another little recipe for you that I tried out the other day. I have been seeing Dessert Hummus recipes around for a while now. Examples: Heather Eats Almond ButterThe Wannabe ChefNamaste Gurl. I thought it seemed weird at first but then I was like, wait a minute. That's not weird! That's fricken awesome! So I gave it a whirl. I made a small batch since it was an experiment. But now I know that I need to make much, much more because it's DELICIOUS and ADDICTING! And I have to try out other flavors now! 

Peanut Butter Chocolate Chip Dessert Hummus (with a hint of coconut!)
  • 1/2 cup chickpeas
  • 2 tbsp peanut butter
  • 2 tsp vanilla extract
  • 1 tbsp maple syrup
  • 2 tbsp coconut milk
  • dash of cinnamon
  • dash of salt
  • chocolate chips
Put all the ingredients except the chocolate chips in a blender or food processor and blend until smooth and creamy. Add more coconut milk if you need it to be creamier and feel free to add more maple syrup if it's not sweet enough. Add more peanut butter if it's not peanut buttery enough! Do whatever you need! Then transfer to a bowl or container and add in some chocolate chips! Then dig in! Eat it by the spoonful, dip cookies or crackers or chips in it! Spread it on toast or whatever! Do whatever the heck you want with this stuff. I found that it was super yummy with pretzels dipped in it! 


Later on I think I'm going to make these AMAZING looking gluten-free omega croutons that I found on Leanne's blog, Healthful Pursuit. One of my new favorite blogs ever! This girl knows what's up! :-)

Those muffins look yummi, healthy and nicely crunchy! I LOVE DESSERT HUMMUS!!! I found the recipe on Katie's awesome blog: Nourishing Flourishing. She has 3 different kinds and they are all incredibly delicious and highly addicting, mmmm :) I really CAN NOT help mysef, when I have a bowl of this stuff in my fridge. Ooopsie, gone too fast, ha ha.

girlfriend!! these look amazing. i bought coconut flour today for no reason and now i'm glad i did!!
p.s. genius to add coconut to the dessert hummus. it's so addicting so i go through it quickly. next time i'm putting coconut milk in mine, too!!

The muffins look wonderful!! I have noticed that a lot of baked goods that include coconut flour can easily turn out a little dry, too. It's super super absorbent, and usually just 2 T. of coconut flour is equivalent to 1/4 c. of another flour.I learned that the hard way! Just cutting back a bit on the coconut flour might make them a little less dry! Although, I can't say that would bother me too much. THey do look amazing crumbled up with cereal, and I bet they'd be wonderful smeared with a little earth balance and maple syrup :]

Those muffins look DELICIOUS and sooo chunky! I'm scared to cook with coconut flour [every time I do the baked good is either TOO dry or way too wet!] so I like finding other peoples' tested recipes so I don't waste ingredients. I've bookmarked this one! yummy!
