Just a daily dose of some goodness.

Hey! How's it going? We've had beautiful sunny days for about a week now and I still can't believe it! I keep waiting for the rain to come back but, it hasn't yet. I still find myself holding my breath though and wondering...is it really Spring?!?

Woody and I spent the morning cruising around town taking care of some errands. Then we stopped to have lunch at Peter Lowell's. It is such an awesome restaurant. They support local farmers who practice sustainable agriculture and all their produce comes from organic sources.

I ordered the Classic Nicoise with California line caught albacore tuna served over a bed of greens with a soft boiled egg, roasted veggies and olives.


All I can say is WOW! This salad was so good. I kept going "Mmmm" after almost every bite! I was totally purring in pleasure.

Woody ordered the grass fed lamb burger with caramelized onions, lettuce and aioli on a housemade bun.


I'm not gonna lie, that burger was looking pretty fricken good! Woody devoured it. 

We were definitely very stoked with our choices! Oh how I love good food! 


Speaking of good food, I made a fritatta last night that could quite possible be my favorite frittata I ever made! And I make A LOT of frittatas! 



In the frittata was 5 eggs, a ton of greens from the garden (kale, mustard and swiss chard), broccoli, basil, black olives, onion, garlic, cheddar style goat cheese and black pepper cooked in the oven at 375 degrees for 20 minutes. I think the special thing about this frittata was the homegrown organic greens. I could taste the love <3 

It was also very special because of what I served along side it!


Sweet potatoes kissed with a bit of coconut oil and salt, baked in the oven for 20 minutes at 350 degrees (turning them once) and then for about 10-15 more minutes at 400 degrees (turning them once more.) Oh man! I think this might be my new favorite way to eat sweet potatoes. Too delicious for words. 



 So, yeah...dinner was pretty rockin' last night!

There was left-over fritatta so I ate some more for breakfast this morning on a piece of toasted Udi's bread.


In other news, I've been eating WAY too many of these lately.


I picked these up at Trader Joe's the last time I was there and it's become a problem. The bag is almost empty.....but I have back up. For someone who loves to bake a lot, it's not cool to have additional treats in the house. I have been busting these out and munching on handfuls several times throughout the day. Then I go and make some cookies and munch on those...and it's a problem, man!!! Luckily, my baked goods tend to be on the healthier side. But, still. I need to be conscious of my sugar-intake, like I talked about recently.

So fun that you love eggs so much- just as much as I do :) They're so nutritious and healthy, especially paired with veggies and sweet potatoes!

Fritatta on my mind. That looks amazing. I could only imagine the taste with all the fresh veggies at your finger tips. I saw the garden in your about me page and love it! How the heck do you grow leafy greens like that? I love gardening but leafy greens just don't want to grow for me :(
BTW, I just found your blog through Namaste gurl. I look forward to reading more :)
