Such a beautiful day!
Before leaving for the hike, I made a breakfast that tasted really good but was otherwise, a total failure! I really loved the Coconut Banana Oat Muffins that I made the other day, so I wanted to try making them in the form of pancakes.
They started out looking pretty good!
But they completely fell apart when I tried to flip them!
We topped them with bananas, strawberries, walnuts and a sauce I made using dates, sunflower butter, vanilla extract and water. Really delicious! The pancakes turned out tasting amazing but they were a challenge to cook and didn't look very pretty. I guess the most important thing is taste though, right?
Last night's dinner was a veggie stir-fry made with onion, garlic, ginger, carrots, zucchini, green pepper, kale, green beans, broccoli, and mushrooms served over buckwheat noodles.
With this sauce:
It was a super simple, delicious dinner!
Dessert was WAY too many of these:
1/4 cup peanut butter, 1/4 cup crumbled gluten-free pretzels, 2 tbsp gluten-free graham cracker crumbs mixed together, then dipped in melted chocolate and placed in freezer until set. WOAH. So good. So so so insanely good. I kept popping these in my mouth last night without even thinking about how many I was eating. Ooops.
I did some grocery shopping yesterday which ALWAYS makes me happy :-)

I apologize for this smorgasbord of a post! When I don't get around to posting every day, there's a lot of meals, pictures and ideas that add up and sometimes they all end up scrambled together in one post, like today!
Woody just started a bonfire for us in the backyard so I'm going to join him. I can't think of a better way to end such a lovely day.
