Peanut butter muffins with salted almond dark chocolate surprise inside!

It was another cold, wet rainy day today. Surprise, surprise. I'm so looking forward to warmth and sunshine! I want to go for a hike with my doggies and take them running on the beach. The gloomy weather has totally been affecting my mood lately. The dogs don't seem too thrilled lately either.

Ok, enough about the doggies! I'm sure you're sick of seeing pictures of them by now because it's not like they're cute or anything ;-)

Last night Woody and I threw on some dressy digs and went out to hear some music and see a good friend of ours belly dance. I hardly took any photos, just a couple of me and Woody before we walked out the door.


One of these days maybe I'll learn how to properly operate my camera and take better photos!

Are you ready to hear about the muffins now?! I thought so :-)

Peanut Butter Muffins (with salted almond dark chocolate surprise inside!)

  • 1 cup Pamela's Baking and Pancake Mix
  • 1/4 cup peanut butter
  • 2 tbsp coconut oil
  • 1 flax egg (1 tbsp ground flax+3 tbsp water)
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 6 tbsp coconut milk
  • 2 tbsp maple syrup
  • And this:
Preheat oven to 350 degrees. Combine peanut butter, coconut oil, flax egg, vanilla, coconut milk and maple syrup in a bowl and mix well. In a separate bowl whisk the Pamela's baking Mix with the baking powder. Then add the dry ingredients to the wet ingredients and mix until combined. Then fill up a greased muffin tin or muffin tin liners with the batter about 1/2 way full. Then, place a square of the delicious chocolate bar in each muffin tin on top of the batter. 


Then cover the chocolate with more of the batter. Bake for 12-15 minutes. Makes 5-7 small muffins.





Words cannot describe the deliciousness of these muffins. At least my words can't. Let me ask Woody. 

Woody says, "It's almost like a fluffy s'more with peanut butter sensibility." Ummm....ok Woody!
He also said," "It's like unwrapping a peanut butter present with your mouth....and finding chocolate." 

Ohhhhh Woody :-) 

I melted some chocolate chips and poured it on one of those peanut butter "presents" tonight and gave it to Woody. He had his muffin in one hand and a beer in the other and he looked like this:

And then I got in on the action.

Do we look happy and excited...or just scary? Woody's a little crazy-eyed, isn't he? I hope you're still able to sleep tonight.

If either of your dogs are missing sometime soon, absolutely do not look at me, I had nothing to do with it :P They're beautiful!! (...and I do need a running partner, remember? ;)
The muffins look awesome, too. Love the beer in one hand, muffin in the other. Classic :P

Haha! Jess, your comment made me laugh out loud. Don't be stealing my dogs now! ;-) They are good running partners though, so if you ever happen to be in my area, you can TOTALLY take my dogs running. As long as you bring them back ;-)
