Sometime we need little reminders, right? ;-)
Today has been fun and productive so far! This morning began with a delicious bowl of cereal.
In the mix is Nature's Path Organic (and gluten-free) Crunchy Vanilla Sunrise Cereal, some homemade chocolate granola, strawberries and almond milk. It's kinda pretty huh? Thank you for being beautiful, strawberries. :-)
After I ate breakfast and did the dishes, I busted out some coconut and made sweet love to it. Or something like that. ;-) I found this recipe for Mounds Candy Bars on this blog: Elana's Pantry. I followed the recipe with just a few tweaks. And I made them into little nuggets instead of bars because I don't own any candy molds. Perhaps I should do something about that.
Chocolate Coconut Truffles:
- 1/2 cup chocolate chips
- 1/2 cup unsweetened shredded coconut
- 1/4 cup coconut oil
- 1 tbsp maple syrup
- pinch of sea salt
Meanwhile, mix the shredded coconut, coconut oil (I melted mine first) and the maple syrup in a bowl.
Roll the mixture into small balls nuggets. (Nuggets sounds better than balls!)
Then roll the nuggets in the melted chocolate and place on waxed paper.
Even after making such a wonderful coconutty creation, I felt that I needed to do more with coconut! So, here is a recipe for one of my favorite Sugar Body Scrubs.
Coco-Love Body Scrub:
- 1 1/4 cups sugar (I did a mix of brown sugar, coconut palm sugar and pure cane sugar)
- 2 tbsp coconut oil
- 2 tbsp cocoa butter
- 2 tbsp sweet almond oil
- Sweet Orange Essential Oil
- Vanilla Essential Oil
Combine the coconut oil, cocoa butter and almond oil in a double boiler and heat until all is melted and mixed together. (Coconut oil and cocoa butter are solid at room temperature.) Remove from heat and allow to cool for a few minutes. Then mix the sugar together in a bowl. Pour the oil over the sugar and whisk until there are no lumps and the oil has been absorbed by the sugar.
Now scent your scrub with the orange and vanilla essential oils!
You can use as much or as little as you like, depending on how strong you want it to smell. It smells divine!!! Like a Dreamsicle on the beach :-) Store your scrub in a container of your choice. Massage it all over your body in the shower or bath (avoiding the face) and rinse away for smooth and silky, coconutty delicious skin.

Hey Alaina is this one similar to the body scrub you made me? I was wanting to make more of it! :)
Kim, this scrub is similar to the one I made you but I think this one is actually better! Cuz I put honey in the one I made you and it got all clumpy and sticky...(sorry!) So, I would recommend making this one for sure. Or I will make it for you!
Sweet, well of course I will always let you make one for me :) since it is made with love and my eczema needs lots of it.. ugh Maybe flat rate it to me? But I am for sure going to try this one on my own too! soon i promise :) I love that i can follow your pictures and steps. It takes a little of the fear out of trying it for the first time :)
