Chocolate Chip Pumpkin Oat Muffins *with peanut butter surprise!*

Hey hey! I got a yummy recipe for ya'll. These muffins are vegan, gluten-free and organic and so they are automatically healthy, right?! Right.


Ingredients:

  • 1 1/4 cup Pamela's Gluten-free Pancake and Baking Mix
  • 1/2 cup gluten-free oats
  • 1 cup pumpkin
  • 1/4 cup coconut oil
  • 1/3 cup milk (I used almond milk because it was in the fridge and needed to be used. Otherwise I would have used coconut milk. But, feel free to use whatever milk you want.) 
  • 1/3 cup maple syrup
  • 1 tsp vanilla
  • 1 tbsp cinnamon 
  • 1/3 cup chocolate chips
  • PEANUT BUTTER! How much? I'm not sure. It's your call. 

Begin by preheating the oven to 350 degrees. In a medium sized bowl, mix together the pumpkin, melted coconut oil, vanilla, milk and maple syrup. In another bowl, combine the flour, oats, cinnamon and chocolate chips. Then pour the liquid ingredients into the dry and mix together. Lightly oil your muffin tins or you can use muffin liners. (I didn't have any around this time.) Fill up the muffin tins or liners about half-way. THEN, (this is the exciting part!) put a dollop of peanut butter on top of the batter. Then put additional batter on top. Pop in the oven and bake for about 30 minutes. This recipe made 8 muffins. (So, as it turns out, these muffins are NOT vegan. I overlooked it at first but there is buttermilk in Pamela's Pancake Mix! So if you are vegan, do not use Pamela's Pancake Mix!)

These muffins turned out very moist and a little mushy. I'm ALL about it, but feel free to bake them for a little longer if you like a firmer muffin. I really liked how moist they turned out though. :-)

Besides baking muffins today, Woody and I ran errands around town, payed some bills and entertained ourselves by putting boxers on Kona's head and laughing really hard about it. We're not immature or anything ;-)

The fact that you call it everydaysweetness rocks!The fact that you make yummy sweets without cow or gluten and don't even call them (gluten dairy free)in the title rocks ooober hard! I love your blog. Your food makes my mouth water. So beautiful! You might want to check, I am pretty sure Pamela's pancake mix has dairy. Which is strange cause most Pamela's mixes are vegan. My favorite flour is Mama's coconut blend and Mama's almond blend. I usually use both together. Works great to replace white flour in almost any recipe. Love Gabe

Thanks Gabe! I will definitely double check the ingredients in Pamela's pancake mix. I appreciate the heads up about that. Hmmm, I've never heard of Mama's coconut blend or almond blend before. We like to put man panties on Rosco's head too. Sometimes we like to put his back legs through too and watch him stumble around. You are making me so sad that I don't have the time/energy to cook much after work :( I got off work 2 hours early last night so I made a simple stir fry with a shit load of Turnip Greens. Want some extras? ;P
